Vegetarian Stuffed Eggplant Roll



I am drooling, you are drooling, this yummy all vegetarian dish will make you forget there is no meat. Personally, I have been pushing myself to try a more plant based diet to balance my gut and gain more energy. Sometimes it is hard when you live with someone who is 100% meat and potatoes. Trust me, I know how hard it is to resist when he is cooking some bacon and I am trying to enjoy my carrots or chickpea nuggets. I have caved, but haven't we all? No ones perfect! But I have learned that you can easily substitute meat for items that can imitate the texture. My main go-to's are mushrooms, eggplant, zucchini, and any potato or squash. Some items won't come out the way you expect and that is okay, there is always trial and error.


I found my inspiration on Pinterest with the recipe that is posted down below. I made some tweaks of my own to make it tailored to me. Now if you are a true carnivore you can also add some meat to this dish. I would suggest to add ground beef or turkey into the filling. The adjustments I made include:

  1. Added 1/2 tsp of Za'atar on each Eggplant slice to add some dimension to the flavors already included

  2. Added 1 cup chopped Portobello Mushrooms into the stuffing

  3. Substituted Greek Yogurt for Tahini in the sauce
