Thai Pasta Salad

Peanut Butter Pasta...weird, but delicious.

Hear me out, peanut butter pasta salad..I know it sounds really strange but it is so delicious. I wrote a previous post about a Thai Chicken Satay that has a peanut butter sauce, and it was so good that why not turn it into a pasta salad for lunch? I was not expecting it to be a hit on the first try but somehow it all came together! The simplicity of this dish makes it a nice lunch or quick dinner on a busy night. I used this as a Kitchen Clean out meal because I had a small amount of peanut butter left and still some red curry paste and half a box of pasta. Worked out perfectly to add some of my vegetables that were almost done too!



The combination of the peanut butter and spice make it a perfect dance of flavors! I ate this one warm pasta once and then the second time cold and either way would work great! Follow along for the easy to follow recipe!


Ingredients:

Pasta

  • 1/2 box 0f Pasta (your choice, I used Veggie Rotini)

  • 1/4 cup chopped Tomatoes

  • 1/4 cup shredded Carrot

  • 1/4 cup chopped Zucchini

  • 2 chopped Green Onions

Sauce

  • 1/3 cup Orange Juice

  • 1/2 cup Coconut Milk

  • 1/4 cup Peanut Butter

  • 3 tbsp White Wine Vinegar

  • 1 tbsp Honey

  • 2 tsp Thai Curry Paste

  • 3 tsp Sriracha

Directions:

  1. Cook the pasta according to the package and then rinse with cold water and set aside.

  2. Mix together all of your sauce ingredients until smooth and combined.

  3. Pour sauce over pasta, mix and add vegetables.

  4. All done, now enjoy!

Now that was simple huh? No time and ready quickly! Feel free to add other toppings as well, I just used vegetables that needed to be used within that day or the next!
