Summer Strawberry Cookies

Y'all....these cookies SCREAM summer! The fresh strawberries meld so nice with the sweet white chocolate, but the cream cheese helps to tame these cookies from being too sweet! I made these multiple times now and Troy (my in-home taste tester) said that I have to be careful how many times I make these or we will end up gaining 10 pounds. I found this recipe on pinterest while trying to find something I could use cream cheese with besides a cheesecake.
This cookie does not come out super brown or crunchy, this has more of a soft cookie texture and so smooth. It melts in your mouth, YES PLEASE. I made this batch specifically for a friend and it is so hard to not sit here and eat the whole plate. The fresh strawberries that are soaked in lemon juice add a nice, bright, acidic note to the cookie that hits the SPOT! Adding a fist-full of freshness for a nice, summer day!
Please see below for the recipe I followed. One note, I did substitute the granulated sugar for honey, but I have also tried it with the sugar and it adds a great texture to the cookie!
