Recipe Review: Chicken Satay from Aimee Mars

If you are looking for an international weeknight dinner dish, here is an amazing one to have in your back pocket! I came across this on Pinterest (as I do most things) and thought it would be a cool new thing to try. Sometimes I am hesitant with the curry paste and spices because my mouth will hate me if I eat anything too spicy. For the recipe, please see the link to her website below. I will just be discussing what I enjoyed and why YOU should try it. FYI, this is best done as an overnight marinade, I have done the recipe with an overnight marinade and a 2 hour marinade and the chicken comes out so tender and juicy with the overnight marinade.
When it came to the sauce I honestly was hesitant, like come on, peanut butter and spices and coconut milk? Odd combination. BUT WOW, what a flavor explosion but oh my Thai it is DELICIOUS. The balance between the sweet and the heat is such power combo. I could eat this sauce by the spoonful! Seriously....I took so many tastings while everything else was cooking. You could dip anything into that and it would be amazing. For some extra heat, I did add about 1 tablespoon of cayenne pepper and it gives the perfect linger of heat, but right as it gets too much, that peanut butter will help come in a cool your tongue.
So I do not have a grill in my apartment sadly, so when it came to cooking the chicken I used my cast iron skillet to get a good crust on the outside of the chicken. I cannot wait to try this recipe when I have a grill. I do not think I have had a more juicy piece of chicken. The flavors that the chicken is marinaded in meld so well with the peanut sauce. I could make this meal every week and not get sick of it.
To go with these, I prepared the cucumber salad, which adds a great amount of acidity to cut through the richness of the peanut butter sauce. I also did Thai French Fries. For this I just cut up some russet potatoes into a french fries and tossed them with a Thai spice blend I have (Can be found on amazon with a set of other international combinations). Then I popped those in my air fryer for 15 minutes on 400 degrees and boom! Dinner is served. For the french fries, make sure you soak the cut potatoes in a cold water bath prior to air frying so that they can be extra crisp!
Overall this is a must have recipe to save and something that can mix up your weeknights. Kids will love that the chicken tenders and fries, and then you can also enjoy the burst of flavor that comes with the power combination of the juicy chicken tenders and the rich, creamy, and spicy peanut sauce.
