Quick, Easy, and Delicious Zucchini Fritter

Imagine, you're sitting around in between meals, getting hungry. Sure you could go grab a granola bar in the pantry, but then you remember all the added sugars in that one bar. You could grab an apple, but that may not be enough to satisfy you and you will be right back in the kitchen 10 minutes later. Problem solved! This super easy and simple zucchini fritter makes it an awesome option that can be made in 10 minutes!
This recipe calls for the following ingredients (will make 7 fritters):
- 1 Medium Zucchini (Grated)
- 1 Medium Carrot (Grated)
- 2 Eggs
- 1/2 cup of Breadcrumbs
- 2 tablespoons of grated Parmesan Cheese
- 1 tablespoon paprika
- 1 tsp cayenne pepper
- 1/2 tsp salt
- 1 tsp black pepper
- 1 tsp olive oil (or avocado oil)
Heat pan on stove over medium heat
Grate the zucchini and carrot. Make sure you drain them with a paper towel to get all the moisture out!*
Place all the ingredients in a bowl and mix together until combined
Grab a palm size of the mixture and form into a patty and then flatten (You can also keep it thicker if you'd like)
Pour oil in pan and then place 2-3 fritters at a time
Cook for 2-3 minutes on each side, until golden brown
Serve immediately or save for an extra snack tomorrow!
*Wrap a paper towel around the grated zucchini and carrot and squeeze until most of the moisture is out. This will ensure a crispy fritter!


This is one of my favorite go to recipes for a quick snack or even for a meat substitute for a burger. This mixture can also be used for meatless meatballs! It can stay in the fridge for an additional 1-2 days after making.
