Peach Cobbler Oat Bars


YES! It is officially the first day of Fall. Personally, the greatest season of the year to me. Like, if I could, I would turn Fall into a Home Decor style - (F)all-year round....Yeah that was lame but it's fine. Before I could ring in fall completely, I had to give a little goodbye to Summer, and while at the farmers market this past weekend I saw the last batch of peaches for the season...so I I bought some. Now, I haven't cooked with peaches often and was not too sure what to do with them. Initially I think of a peach cobbler or crumble, so this leads me to Pinterest, everyone's handy-dandy tool for all things food. I found this magical recipe for Peach Oat Bars. I love to incorporate oats into any treat that I can and here was a great opportunity.


This recipe may take some time, this won't be your quick bake and serve recipe if you want nice and clean bars, but you can serve it hot right out of the pan if you want more of a cobbler. This recipe takes about 2 hours to cool in order to get the bars to stay together. But let me tell you, IT IS WORTH THE WAIT. I know, I am one of the most impatient people I know, I was struggling so hard to not eat them and ruin a good photo. It was a very stressful two hours for me.
