Creamy White Bean Soup

Vegetarian White Bean Soup, creamy and flavorful!

Soup season is here! What is better on a chilly, rainy day than a good bowl of soup? NOTHING. Well at least to me, I love love love soup season. All of the different types of soups, but my favorite are the smooth and creamy soups. This recipe is a riff off a few things I have seen, and yes it can be Vegan as well if one ingredients is left out.
The really cool thing about this recipe is that you get a super creamy soup without using any cream or dairy product. The beans will blend to be very smooth and creamy to add that viscosity to your soup. This will mimic a Tomato Bisque in texture. Note: If your soup does not seem to thicken as well, use a small amount of cornstarch. Mix a 1:1 ratio of cornstarch and your broth first and then add it into your whole pot. (For example, take out 1 tbsp of broth into a small bowl and add in 1 tbsp of cornstarch and mix until the cornstarch dissolves. Then add the mixture into your Dutch oven).

Ingredients:
1 cup diced Onion
4 cloves chopped Garlic
1 diced Red Bell Pepper
1 cup diced Squash
1 15oz can Cannellini Beans
1 15oz can Navy Beans
3 cups Vegetable Stock
1 lemon (juice of)
1 diced Tomato (I used a large Heirloom)
2 tbsp Olive Oil
1 tbsp Dried Basil
1 tbsp Paprika
1 tbsp Salt
1/2 tbsp Pepper
1/2 cup Parmesan Cheese (optional)
Directions:
In a Dutch oven over medium heat add olive oil and sauté onions and garlic until the onions are translucent.
Add in bell pepper, tomato, and squash and sauté until tender.
Sprinkle in basil, paprika, salt, and pepper and toast for 2 minutes.
Pour in stock, lemon juice, and beans. Let the soup simmer for 4-6 minutes.
Pour soup into a blender and blend oh high until smooth.
Return the blended soup back over the heat and simmer for an additional 3-4 minutes. If you would like, add in the 1/2 cup of Parmesan cheese at this point.
