Chocolate Zucchini Bread

Ooey, Gooey, Vegetable-y Goodness!

Trust me I know, we have all tried banana bread and its delicious..but Zucchini..in a chocolate bread? Well, no need to wonder or worry. The zucchini makes this chocolate loaf extremely moist and you get the added nutrition from the zucchini! I live with a very picky eater and this was going to be a toss up, you could imagine my surprise when he said he REALLY liked it. ( I asked again as I was writing this what he would describe it as and all he did was eat another piece in about 3 seconds...so that answers it for me!) This would be a great option if you have kids who do not want to eat their vegetables or any other picky eater in the house.

The ease of a recipe like this makes it convenient and takes no time. I made the batter in 10 minutes and then I didn't even have to take it out of the oven for 50 minutes. This week I am doing a kitchen clean-out. I made this recipe solely on the fact that I have zucchini in the fridge that was going to go bad and I wanted something sweet! Follow along for the recipe and instructions!
Ingredients:
1 cup All-Purpose Flour
1/2 cup Unsweetened Cocoa Powder
1 tsp Baking Soda
1/4 tsp Salt
2 Large Eggs
4 tbsp Unsalted Butter (Melted)
1/4 cup Vegetable Oil
1/2 cup Brown Sugar (Packed)
1/4 cup Honey
1 cup Zucchini (Shredded, not drained)
3/4 cup Semi-Sweet Chocolate Chips
Directions:
Preheat oven to 350 degrees and spray a 9x5 loaf pan.
In a small bowl combine flour, cocoa powder, baking soda, and salt and set aside.
In a medium bowl combine eggs, melted butter, oil, brown sugar, and honey until smooth.
Fold dry ingredients into the wet ingredients until just combined.
Fold in shredded zucchini and 1/2 cup chocolate chips until incorporated.
Pour batter into the loaf pan and top with remaining 1/4 cup of chocolate chips.
Bake from 45-55 minutes or until a toothpick comes out clean. Cool on a wire rack for 10 minutes and then remove from the pan, slice, and serve!
