Apple Bourbon Maple Blondie



Fall is in the air! Like anyone else born in New England, Fall is my favorite season. The crisp air, cozy weather, and of course the food! I love the warm apple desserts, pumpkin drinks, and decadent butternut squash soups. With all of that in mind, I combined my top 3 favorite fall items, Apple, Maple, and Bourbon. YUM! Each element in this blondie will make you want to cozy up with a nice blanket and watch the leaves change color. The brown sugar in this recipe is the key to get the blondie caramelized on the outside, but soft and gooey on the inside with a nice bite from the apple chunks. FYI this is not one of my healthier desserts! This is a stick to your bones, ooey gooey, sweet dessert!


The ingredients include:


For the Blondie

  • 1 stick (1/2 cup) Unsalted Butter (Melted)

  • 1 cup Brown Sugar

  • 1 Egg

  • 2 tsp Cinnamon

  • 1/8 tsp Salt

  • 1/3 cup Honey

  • 2 medium Gala Apples (chopped)

  • 1 cup All Purpose Flour

For the Caramel Topping:

  • 1 cup Pure Maple Syrup

  • 3 tbsp Bourbon

  • 1 tsp Cinnamon

  • 1/2 stick (1/4 cup) Unsalted Butter

  • 3 tbsp Cream

  • 2 cups Powdered Sugar

Instructions:

  1. Preheat oven to 350 degrees and spray a 9x9 baking dish.

  2. Beat the sugar and butter until combined.

  3. Add in the egg, salt, honey, and cinnamon until smooth.

  4. Fold in the chopped apples and then fold in flour until combined.

  5. Pour the batter into the baking dish and even it out with a spatula. You will bake for 30-35 minutes and then cool on a wire rack.

  6. Once the blondie is cool, begin to make the gooey caramel topping. Start by boiling the maple syrup and bourbon for 3-4 minutes in a small sauce pan.

  7. Then take the pot off the heat and add in the butter, cream, and cinnamon.

  8. Once combined and smooth, whisk in the powdered sugar until smooth.

  9. Pour the caramel over the blondie and let it set up.
