BBQ Chicken Tostada WITH Vegetarian Substitution

From busy college student to stay at home parents trying to juggle 3 kids, this quick fun lunch idea will have you full and satisfied in 10-15 minutes! I know personally working from home right now, sometimes I am just too busy to make a big lunch and need something quick and simple. I also want something that will fill me up so I am not constantly snacking when my kitchen is only a short walk away. Follow along for the recipe and instructions, there are 2 variations I have made, one with chicken and one with sweet potato and mushrooms.
The ingredients you will need include:
Non-Vegetarian:
- 1 Package of Tostadas (or Corn Tortillas, just give them a good toast in the oven to they are crispy)
- 1 cup of your favorite BBQ Sauce
- 1 cup of your favorite shredded cheese (I use Mozzarella and Mild Cheddar for this)
- 4 oz Chicken tender or breast (chopped)
- Salt and Pepper to taste
Vegetarian/Vegan Option:
- 1 Package of Tostadas (or Corn Tortillas, just give them a good toast in the oven to they are crispy)
- 1 cup of your favorite BBQ Sauce
- 1 cup of your favorite vegan shredded cheese
- 1 medium Sweet Potato (chopped)
- 1/2 cup Shiitake Mushrooms (chopped)
- Salt and Pepper to taste
Instructions:
1. Preheat oven to 350 degrees.
2. Cut up your chicken, sweet potato, and mushrooms, then season with salt and pepper

Vegetarian: On a pan over medium heat, add 1 tsp of olive oil and cook the sweet potatoes for 8-10 minutes or until tender and browned. Toss in the mushrooms and cook for 2 additional minutes.
Non- Vegetarian: On a pan over medium heat, cook the chicken for 8-10 minutes or until cooked through.
4. Place two tostadas on the sheet pan, and begin to build your creation! I usually do Tostada, Potato/Chicken, Sauce, and finish with cheese.
5. Place in the oven for 5 minutes or until cheese is melted and gooey!
